Sesame Peach Balls

This is a perfect snack during your active adventures.

  • 1 cup dried peaches (the chewy kind, not the crunchy freeze dried kind) about 8 halves
  • 3/4 cup almond flour (or almond meal)
  • 1/4 cup shredded coconut
  • 1/4 cup sesame seeds
  • 1 Tablespoon coconut oil
  • 1 egg 
  1. Preheat oven to 350 degrees.
  2. Combine peaches, almond flour, coconut and sesame seeds in a food processor and process until well broken down.
  3. Drizzle in coconut oil while pulsing.
  4. Transfer to a mixing bowl and add the egg.
  5. Roll into small balls and place on a cookie sheet covered with parchment.
  6. Bake about 12-14 minutes, until slightly browned.
