No Cook Breakfast

Hopefully you are fortunate enough to have your electricity back. Extended periods without electricity makes meal preparation that little bit more challenging. So in honor of the freak October snowstorm here is a no cook breakfast idea. You will want to keep your milk and yogurt chilled, so here’s hoping you have a cooler with some ice.

Overnight Muesli

Ingredients
  • 2 cups rolled oats (not instant or quick cooking) 
  • 2 cups milk or yogurt or soy or almond milk
  • 1 teaspoon lemon zest 
  • 1/2 teaspoon vanilla extract 
  • 1/4 cup chopped pecans, walnuts or almonds 
  • 1 cup fresh fruit, (peaches, apricots, berries, bananas) pitted and sliced 
  • 2 tablespoons sweetener (optional, honey, maple syrup, agave nectar)
Directions
  1. Combine oats, milk, zest and vanilla in a bowl.
  2. Cover and refrigerate overnight. 
  3. The next morning, scoop oatmeal into bowls and top with pecans, peaches and a drizzle of sweetener.
Serves 4
