Chicken Cacciatore Recipe

Ingredients

  • 1 1/2 C marinara sauce
  • 1/2-1C thin sliced onions
  • 1/4 C tomato paste
  • 1/4 C water
  • 1/2 tsp dried rosemary 
  • 1/2 tsp salt
  • 8-10 oz mushrooms half or quartered
  • 8 chicken thighs wo skinPre-Race Dinner. Mmmm FOOD!
Directions

  1. Mix all ingredients in slow cooker.
  2. Add chicken, stir to coat
  3. Cook covered on high 2 1/2-3 1/2 hrs or 5-8 hrs on low

Chickpea Cacciatore

  • Same as above recipe, except switch the chicken thighs for a can of rinsed and drained chickpeas.
